🥗🥩 Chopped Flank Steak Salad 🥩🥗

Ingredients:

For the Steak:

  • 1 pound flank steak

  • 1 tablespoon olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon smoked paprika

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

For the Salad:

  • 6 cups romaine lettuce, chopped

  • 1 cup cherry tomatoes, halved

  • 1 cucumber, diced

  • 1/2 red onion, finely sliced

  • 1 avocado, diced

  • 1/4 cup crumbled feta cheese (optional)

For the Dressing:

  • 3 tablespoons olive oil

  • 1 tablespoon fresh lemon juice

  • 1 teaspoon Dijon mustard

  • 1 teaspoon honey

  • Salt and black pepper to taste

Directions:

  1. Season the Steak:
    Pat the flank steak dry with paper towels. Rub both sides with olive oil, garlic powder, smoked paprika, salt, and black pepper.

  2. Cook the Steak:
    Heat a grill pan or skillet over medium-high heat. Cook the steak for 4–5 minutes per side for medium-rare, or until desired doneness. Remove from heat and let rest for 5 minutes.

  3. Prepare the Salad Base:
    In a large bowl, combine the chopped romaine, cherry tomatoes, cucumber, red onion, and avocado.

  4. Make the Dressing:
    In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and black pepper until well emulsified.

  5. Slice and Chop the Steak:
    Slice the rested steak thinly against the grain, then chop into bite-sized pieces.

  6. Assemble the Salad:
    Add the chopped steak to the salad bowl. Drizzle with dressing and toss gently to combine.

  7. Finish and Serve:
    Sprinkle with feta cheese if using. Serve immediately while the steak is still warm.
